  Cilantro Lime Salsa

Preparation Time:  30 minutes

Equipment:

  1. Large bowl for mixing at least 2 liters or US liquid quarts of materials

  2. Kitchen knife for chopping, etc.

  3. Ladle or a large spoon for mixing, stirring, and serving

  4. Tablespoon

  5. Teaspoon

Ingredients for 4 people:

  1. Italian tomatoes:  6 large, plump ones

  2. Cilantro:  Enough to produce 1 spoon of fresh, finely chopped

  3. Lime:  2 fresh

  4. Onion:  1 medium size

  5. Jalapeņo pepper:  1 large, ripe

  6. Only the green tops of 2 green onions

Procedures:

  1. Dice the tomatoes to approximately 1 cubic centimeter (3/8 inch) size.

  2. Finely chop the cilantro, onion, and jalapeņo pepper.

  3. Very finely chop the green onions' tops.

  4. Extract 2 tablespoons of juice from the limes.

  5. Mix all ingredients and add 1 tablespoon of sugar, 1 teaspoon of salt, 1 teaspoon of fine ground black pepper, and 2 tablespoons of olive oil.

  6. Stir well and refrigerate overnight and stir well before serving.

  7. Serve with tortilla chips and your favorite beverages.
