Cilantro
Lime Salsa

Preparation Time:
30 minutes
Equipment:
-
Large bowl for mixing at least 2 liters or US
liquid quarts of materials
-
Kitchen knife
for chopping, etc.
-
Ladle or a large spoon for mixing, stirring,
and serving
-
Tablespoon
-
Teaspoon
Ingredients for 4 people:
-
Italian tomatoes: 6
large, plump ones
-
Cilantro: Enough
to produce 1 spoon of fresh, finely chopped
-
Lime: 2 fresh
-
Onion: 1
medium size
-
Jalapeņo pepper: 1
large, ripe
-
Only the green tops of 2
green onions
Procedures:
-
Dice the tomatoes to
approximately 1 cubic centimeter (3/8 inch) size.
-
Finely chop
the cilantro, onion, and jalapeņo pepper.
-
Very finely chop
the
green onions' tops.
-
Extract 2 tablespoons
of juice from the limes.
-
Mix all ingredients and add 1 tablespoon
of sugar, 1 teaspoon of salt, 1 teaspoon
of
fine ground black pepper, and 2 tablespoons of olive oil.
-
Stir well and refrigerate
overnight and stir well before serving.
-
Serve with tortilla chips and your favorite
beverages.
